Salisbury Steak with Mushrooms and Gravy

A cozy Salisbury steak dinner finished with savory mushrooms and rich gravy.

Ingredients

For The Salisbury Steaks

  • 1 lb hamburger (80% lean was used)
  • 6 ounces pioppino, chestnut, nameko, or shiitake mushrooms
  • 13 Ritz crackers, crumbled (or 1/3 cup bread crumbs)
  • 1 large egg
  • 1/2 medium onion, chopped
  • 1/2 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt

For The Gravy

  • 2 1/2 cups water
  • 1 tablespoon beef base or beef paste
  • Tartar sauce or remoulade, optional

For The Gravy Slurry

  • 1 tablespoon water
  • 1 tablespoon cornstarch

Pioppino, Chestnut, Nameko, or Shiitake mushrooms

Instructions

  1. Combine the Salisbury steak patty ingredients in a bowl and form patties to your desired size. Gently shape the hamburger into the mix last for ease of mixing and handling.

  2. Heat a large skillet over medium temperature and brown the patties for 2 minutes on each side. Remove the patties from the pan and set aside.

  3. Remove the patties from the pan and set aside.

  4. Add the mushrooms and onions to the pan and sauté for 2–3 minutes.

  5. Add the water and gravy mixture to the pan. Simmer until the base is fully dissolved.

  6. Reduce the heat to low, add the patties back to the pan, and cover. Let them cook on low simmer for 3 minutes.

  7. Remove patties and check for the desired level of doneness.

  8. Combine the slurry ingredients in a small bowl and add it to the gravy until you reach your desired thickness.

  9. Add the Salisbury steak back to the gravy or smother with the gravy and serve.
