Shrimp and Shrooms

Juicy shrimp and tender oyster mushrooms come together in a buttery garlic sauce for a quick, savory meal that feels special without requiring a lot of prep.

Ingredients

For the Shrimp & Mushrooms

  • 1 lb large shrimp, peeled and deveined
  • 8 oz fresh oyster mushrooms, cleaned and torn into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon sea salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes, optional
  • 1 tablespoon fresh lemon juice

For Finishing & Serving

  • 2 tablespoons fresh parsley, chopped
  • Lemon wedges, for serving
  • Cooked rice, pasta, or crusty bread, optional

Instructions

  1. Season the shrimp. Pat the shrimp dry with paper towels, then season with the smoked paprika, salt, and black pepper.

  2. Sauté the oyster mushrooms. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the oyster mushrooms in an even layer and cook for 4–5 minutes, stirring occasionally, until tender and lightly browned.

  3. Add the garlic. Reduce the heat slightly and stir in the minced garlic and crushed red pepper flakes, if using. Cook for about 30 seconds, just until fragrant.

  4. Cook the shrimp. Push the mushrooms toward the sides of the skillet and add the shrimp. Cook for about 2 minutes on the first side, then flip and continue cooking for another 1–2 minutes, or until the shrimp are pink and opaque.

  5. Finish the sauce. Add the remaining tablespoon of butter and the lemon juice. Toss the shrimp and mushrooms together until everything is evenly coated in the buttery garlic sauce.

  6. Add the parsley. Remove the skillet from the heat and stir in the chopped parsley. Taste and adjust the salt, pepper, or lemon juice if needed.

  7. Serve immediately. Serve the Shrimp & Shrooms hot on their own or over rice or pasta. Crusty bread also works well for soaking up the garlic butter sauce.
