Ingredients

For the Mushrooms

  • 1 lb oyster mushrooms, cleaned and torn into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried thyme
  • 1/2 teaspoon sea salt, or to taste
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes, optional

For Serving and Garnishing

  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon lemon juice, optional

Instructions

  1. Heat the pan. Add the olive oil and 1 tablespoon of the butter to a large skillet over medium-high heat. Heat until the butter is melted and the pan is hot.

  2. Add the oyster mushrooms. Place the mushrooms in the skillet in as even a layer as possible. Let them cook undisturbed for 2–3 minutes so they can begin to brown.

  3. Sauté until golden. Stir the mushrooms and continue cooking for another 4–5 minutes, or until they are tender and lightly browned around the edges.

  4. Add the garlic and seasonings. Reduce the heat slightly, then add the minced garlic, thyme, sea salt, black pepper, and crushed red pepper flakes if using. Stir well and cook for about 1 minute, just until the garlic becomes fragrant.

  5. Finish with butter. Add the remaining tablespoon of butter and toss the mushrooms until evenly coated and glossy.

  6. Add the finishing touches. Remove the skillet from the heat and stir in the chopped parsley. Add the lemon juice if using and toss once more.

  7. Serve immediately. Taste and adjust the salt or pepper if needed. Serve the sautéed oyster mushrooms hot as a side dish or alongside your favorite meal
