For The Lion's Mane Cakes

  • 1 lb fresh Lion’s Mane mushrooms
  • 2 tablespoons butter or olive oil
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Old Bay seasoning
  • 1 teaspoon lemon juice
  • 2 tablespoons fresh parsley, finely chopped
  • 2 green onions, thinly sliced
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt, or to taste

For Cooking

  • 2 tablespoons butter or cooking oil
  • Lemon wedges, for serving
  • Tartar sauce or remoulade, optional

Lion's Mane

Instructions

  1. Prepare the Lion’s Mane. Gently clean the mushrooms and tear them into small pieces. Finely chop or shred them until they resemble the texture of lump crab meat.

  2. Cook the mushrooms. Melt the butter in a skillet over medium heat. Add the Lion’s Mane and cook for about 5–7 minutes, stirring occasionally, until softened and excess moisture has cooked away. Remove from the heat and allow to cool slightly.

  3. Make the mixture. In a large bowl, combine the cooked Lion’s Mane, breadcrumbs, egg, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, lemon juice, parsley, green onions, garlic powder, black pepper, and salt.

  4. Form the cakes. Gently mix until everything is evenly combined. Divide the mixture into 6–8 portions and shape each into a round patty about 3/4-inch thick.

  5. Chill if needed. If the mixture feels soft, place the formed cakes in the refrigerator for 15–20 minutes. This helps them hold their shape while cooking.

  6. Pan-fry until golden. Heat the butter or oil in a large skillet over medium heat. Add the cakes without overcrowding the pan and cook for about 4–5 minutes per side, or until golden brown and heated through.

  7. Serve. Transfer to a plate and serve hot with lemon wedges and your favorite tartar sauce or remoulade.
